Laura Santtini's Tasty Veal Escalope
An escalope is a piece of boneless meat that has been thinned out using a mallet, rolling pin or beaten with the handle of a knife, or merely butterflied. If you are watching your weight, veal is a good alternative to beef as it is lower in fat. If you can’t find veal, turkey or chicken make a good alternative. For a tasty accompaniment to this dish cut zuchinni into long thin strips, that have been coated in seasoned flour, dipped in milk and then deep fried.

INGREDIENTS

2        4 ounces pieces of veal, turkey or chicken, flattened into escalopes

FOR SALSA

2        teaspoons Taste #5 Umami Bomb
1/4       onion, finely chopped
3          cloves garlic, finely chopped
2          green chilis, seeded and deribbed, finely chopped
1          tablespoon rice vinegar
2          tablespoons olive oil

METHOD

  1. First make the salsa by mixing all the ingredients together in a bowl
  2. Preheat a grill or broiler and cook the meat on both sides until just cooked
  3. Dress the veal with the salsa
