Laura Santtini's Maple Glazed Salmon

This is my favorite way with salmon and we usually have it at least once a week at home. Take care not to over do the maple syrup as the dish loses something if it is too sweet. This method also works very well with chicken thighs and even roasting vegetables.

INGREDIENTS

2          salmon fillets
1/4       cup maple syrup
1          generous tablespoon Taste #5 Umami Vegetarian Far Eastern paste
1          tablespoon soy sauce
1        garlic clove, crushed
pinch ground ginger
sea salt and freshly ground black pepper

METHOD

  1. In a small bowl, mix together the maple syrup, umami paste, soy sauce, garlic and ginger, and season to taste with salt and pepper
  2. Place salmon filets in an ovenproof dish and coat them on all sides with the mixture. If time permits, cover with cling wrap and leave to marinate in the refrigerator 30-60 minutes
  3. When read to cook, preheat the oven to 400˚F
  4. Cook the salmon uncovered about 15 – 30 minutes until center is just cooked through
