Laura Santtini's Cottage Pie

Shepherd’s Pie or Cottage Pie – what do you call it? Technically, a Shepherd’s Pie is made with lamb and a Cottage Pie with beef. Whatever you want to call them, I love them both. This one is made with beef and a good squeeze of Bomba! XXX and Umami Bomb.

SERVES   6-8

INGREDIENTS

2          tablespoons olive oil
2          yellow onions, finely chopped
2          cloves garlic, crushed
2          pounds, ground beef
4          tablespoons Bomba! XXX paste
1          teaspoon Taste #5 Umami Bomb paste
1          cup of beef stock
1          pound potatoes
2 1/2    pounds sweet potatoes
4          tablespoons unsalted butter
1          cup milk, warmed
grated nutmeg (optional)
Kosher salt and freshly ground black pepper

METHOD

  1. Preheat over to 350˚F
  2. Heat olive oil in large pan and sauté the onions for 4-5 minutes until soft and translucent
  3. Add garlic and cook for another minute
  4. Add ground beef and cook until browned 6-10 minutes
  5. Add the Bomba and Umami Bomb pastes and stock and simmer on low for 20 minutes
  6. Peel all the potatoes
  7. Cut into 2 inch cubes
  8. Cook in salted boiling water for 10-12 minutes until fork tender
  9. Drain potatoes and add the butter
  10. Mash together while slowly added the warmed milk
  11. Season to taste
  12. Spread the ground beef mixture evenly in an ovenproof dish
  13. Spread the mashed potatoes evenly on top of the ground meat
  14. Bake in the overn for 30 – 40 minutes until golden brown and bubbling
  15. Remove from oven allow to stand for 5 minutes before serving
