Laura Santtini's Asian-Style Quinoa

This is a quick and healthy stir-fry which makes an ideal mid-week supper. You can add a pound of ground beef, pork or turkey. Kids love this dish! If you can find the pouches of ready-cooked quinoa, then this dish becomes even quicker. Otherwise, cook the quinoa in advance.

INGREDIENTS

1          tablespoon sesame oil
3          garlic cloves, sliced
1          teaspoon fresh ginger, grated
1          tablespoon Taste #5 Vegetarian Far Eastern paste
1        cup of pre-cooked quinoa (l like to use a mix of red and white)
1          cup broccoli
4          spring onions (scallions)
1/2       teaspoon chili flakes or 1 fresh chili (seeded and chopped)
2          tablespoons ‘nam pla’ fish sauce
1          tablespoon honey
juice of 1 lime
Kosher Salt and freshly ground pepper

TO SERVE

Generous handful of fresh cilantro, finely chopped
Finely grated zest of one lime
Lime wedges

METHOD

  1. Heat the sesame oil in a large non-stick pan, add garlic, ginger and umami paste
  2. When sizzling, add the quinoa and broccoli and stir-fry until broccoli is tender
  3. Add spring onions, chili, fish sauce, honey and lime juice and stir-fry until bubbling
  4. Reduce heat and simmer for another minute to ensure broccoli is tender
  5. Serve topped with a sprinkling of chopped cilantro, grated lime zest and lime wedge
